Baingan ka bhartha is one of the famous punjabi dish. It is made with roasted brinjal then toss him with onion and tomatoes. It has a delicious smoky flavour. It goes well with naan or chapati.

Serves : 4
  • 2 nos large brinjals

  • 1 cups finely chopped onions

  • 1 cups finely chopped tomatoes

  • 2 nos finely chopped green chilly

  • 3 tbsp oil

  • 1/4 cups corriander leaves

  • 1 pinch salt according to taste

  • 1 tsp red chilly powder

  • 1 tsp garam masala powder


  • Wash the brinjals & dry them with kitchen towel.
  • Apply some oil all over it and roast it on flame.
  • Roast it till it completely cook.
  • Wash and remove the roasted skin. Mash them and Keep aside.
  • Heat oil in a kadai.
  • Add onions in it and saute them till they become transparent.
  • Add tomatoes in it and saute them.
  • Add salt, red chilly powder and garam masala powder in it. Cook it till the oil separates.
  • Add mashed brinjal and green chillies in it. Mix well.
  • Cook for five minutes on low flame.
  • Add corriander leaves in it. Mix well.
  • Cook for another two minutes.
  • It's ready. Serve hot with naan or chapati.
