Ingredients

Serves : 2
  • 4 nos brinjal slit


  • 2 tsp grated coconut


  • 2 nos onions sliced


  • 1 tsp poppy seeds


  • 1-2 nos tamarind pulp


  • 1 tsp jaggary


  • 1 tsp ginger garlic paste


  • 1 tsp red chilly powder


  • 1/2 tsp turmeric powder


  • 1 tsp cumin powder


  • 1 tsp coriander powder


  • 1 tsp kolhapuri masala


  • 1 tsp salt to taste


  • 1 tsp mustard seeds

Directions

  • Dry roast onion, poppy seeds, coconut, coriander powder and grind it to smooth paste by adding some water. keep it aside. Heat oil in a pan and add mustard seeds.
  • Add some chopped onion and ginger garlic paste. When it turns brown add seasoning.
  • Stuff the onion paste in the brinjal and add it into the pan . Add remaining paste into it.
  • Add some salt and tamarind pulp with jaggary. Cover it with lid and cook until brinjal are tender.
  • Add some water , cumin powder , kohlapuri masala and fresh coriander. Cover for a minute and serve hot.
