Pineapple Buttermilk curry

Ingredients

  • Pineapple small slices - 15


  • Buttermilk -3cups


  • Turmeric powder-3/4Tsp


  • Mustard seeds - 1/2Tsp


  • Cumin Seeds - 1Tsp


  • Fenugreek seeds - 1/2Tsp


  • Grated coconut- 4Tbsp


  • water - 1.5Cups + 2Tbsp


  • Sugar - 1Tbsp


  • Red chilli powder- 1.5Tsp


  • Salt - 1Tsp


  • Curry leaves- 1/2Tbsp


  • Dry red chillies- 3

Directions

  • Beat the butter milk along with turmeric powder , 1/2 tsp salt using a hand blender and keep it aside
  • Grind the coconut and cumin seeds and keep it aside
  • Cook the pine apple in a pan with turmeric , red chilli powder , sugar and 1 1/2 cups of water . Let it be cooked until the water is absorbed.
  • Now add the grinder coconut to the pineapple with 2tbsp water and let it be cooked for 3 minutes
  • Add the cooked pineapple to the beaten buttermilk .
  • In a pan, heat the oil and add mustard seeds , fenugreek seeds , curry leaves and fry red chillies. Sauté it and season the butter milk with it
  • The pineapple curry can be served with boiled rice 🍚. Extra spices can be added if hot choice to spice it up .
