Varan-bhaat is a vegan, Indian food preparation involving pigeon pea split beans and rice as its main ingredients. Its other ingredients are turmeric powder, cumin seeds,asafoetida, jaggery or sugar, and salt.
Varan is a staple and quite popular in Goa and Maharashtra region. It is consumed on the everyday basis as well as in fasting, religious functions, Marriages. Easy to prepare, non-spicy, require few ingredients and has a subtle taste. Very nutritious and goes well with steamed rice, pickle, and papad.
In this recipe, I have used Mix dals, Tur and Moong Dal for dal or varan preparation. It tastes awesome with plain steamed rice.

Ingredients
Serves : 6
1/4 cups tur dal (medium cup)
1/2 cups moong dal (medium cup)
1/2 nos finely chopped onion
1/2 tsp cumin seeds
1/2 tsp mustard seeds
3-4 nos curry leaves
2-3 nos garlic cloves crushed
1-2 nos green chili slit
1/2 tsp asafoetida
1/2 tsp turmeric
1 nos finely chopped tomato
2-3 tbsp finely chopped coriander leaves
2 tbsp grated coconut
1 pinch sugar (optional)
1/2 tsp salt to taste
1/2 tbsp oil
2 cups water as per your thickness preference
Directions
Wash and cook tur and Moong dal adding chopped onion in a pressure cooker for 3 whistles.
In a wok or pan heat oil. Add mustard and cumin seeds. Let it splutter.
Add curry leaves. Stir it. Add minced or crushed garlic, chili. Cook well.
Add Asafoetida, Turmeric, Tomato. Cook till tomato softens.
Add cooked, slightly mashed tur dal-onion mixture, salt, a small pinch of sugar. Mix well.
Add finely chopped coriander leaves and grated coconut. Mix well. Simmer it for 2-3 minutes. Adjust the consistency as per your requirement.
