Shahi Nutrela Pulao/Biryani

Shahi Nutrela Pulao is a unique and different style of making vegetarian biryani. It is a boon for the vegetarians as nutrela chunks has a feel of non veg and is delicious and flavourful. It is a wholesome meal when served with burrani raita or curry.

Ingredients

Serves : 5
  • 1 cups nutrela mini chunks, washed and soaked in water


  • 2 cups cooked long grain kohinoor basmati rice


  • 1/4 tsp saffron (kesar) strands


  • 1 tbsp olive oil


  • 2 nos cloves


  • 4-5 nos whole pepper


  • 2 nos cinnamon sticks


  • 2 nos green cardamoms


  • 1 nos black big cardamom


  • 1 tsp cumin seeds


  • 1 tsp finely chopped green chillies


  • 2 nos bay leaves


  • 1 nos javitri


  • 1/2 tsp chilli powder


  • 1 nos carrot medium chopped


  • 1/4 cups french beans finely chopped


  • 1/2 cups boiled green peas.


  • 1 tsp salt or to taste


  • 1 tsp biryani masala


  • 1 tbsp milk


  • 1 tbsp for the garnish: fried cashewnuts

Directions

  • Combine the saffron and 1 tablespoon of warm water in a small bowl, mix well and keep aside.
  • Heat 1 teaspoon olive oil in a broad pan and sauté the french beans, carrots and green peas for 2 minutes on a high flame.
  • Add soaked nutrela chunks and again sauté for a minute. Take it out in a bowl and keep aside.
  • Heat the ghee in the same pan, add the cloves, cinnamon, black and green cardamoms, cumin seeds, green chillies and bayleaf and sauté on a medium flame for a few seconds.
  • Add the chilli powder, and sautéed vegetables and nutrela and green peas and sauté on a medium flame for 1 minute.
  • Add the rice, biryani masala, saffron-milk mixture and salt, mix well and cook on a medium flame for 2 minutes, while stirring occasionally.
  • Garnish with cashewnuts and serve immediately with burrani raita, or any curry.
