Description
This yummy Kerala style Chicken Stew is a must try recipe. Very easy and healthy, it is a one pot meal to be enjoyed with appam, idiyappam or just plain steamed rice. It is very light on the tummy and the creamy texture from the coconut milk gives it a rich flavour with a hint of sweetness.

Ingredients

chicken on bones, curry cut 250-300 gms
raw papaya, cubed 1/2 cups
carrot, cubed 1 nos
beans, cut 8-10 nos
mushrooms, diced 5-6 nos
green peas 1/4 cups
thin coconut milk 2 1/2 cups
thick coconut milk 1 cups
coconut paste 1-2 tbsp
coconut oil 2 tbsp
coconut oilcinnamon stick 1 inch
green cardamoms 3-4 nos
cloves 4-5 nos
star anise 1-2 nos
bay leaves 1-2 nos
onion, chopped 1 nos

cloves garlic, chopped 2-3 nos
Ginger, chopped 1 inch
fresh green chilies, slit 2 nos
salt to taste 1 tsp
pepper powder 1/4 tsp
coriander leaves 1 tsp
Directions
Heat oil in a pan and temper with the cinnamon, cardamoms, cloves, bay leaves and star anise.

Then add the chicken, veggies and green chilies. Give it a mix. Add the thin coconut milk, salt and pepper. Simmer on a low flame till everything is nicely cooked.
Add the thick coconut milk and coconut paste. Give it a stir and bring it to a boil. Switch off the flame. Garnish with coriander leaves and serve with appam, idiyappam or just plain steamed rice.
