Ingredients

Serves : 2
  • 2 cups whole wheat flour


  • 1/4 tsp salt (or as needed for taste)


  • 1/2 tsp chilli powder


  • 1/2 cups water or as required (or as needed to make a pliable dough. might vary depending on the quality of flour)


  • 1/4 tsp ajwain/carrom seeds


  • 1 cups bathua/chenopodium purée ( bathua leaves boiled and pureed in mixer)


  • 1/2 tsp garam masala


  • 1 tsp ghee or oil for frying

Directions

  • Mix the flour , ajwain seeds, garam masala chilli powder and salt in a bowl
  • add chopped leaves of methi and bathua purée little at a time to the flour until it comes together into a pliable dough.
  • The final consistency should not be too tight or too soft.
  • Knead it well until smooth.
  • Apply some oil or ghee on palms and make lemon sized balls out of it.
  • Roll out paranthas of around 6 inches diameter, heat a tawa and shallow fry , turning from time to time until they come out crispy and golden.
  • Serve crisp and hot with any curry, raita or pickle. Enjoy endlessly...
