Power packed green methi paranthas
In this recipe we combine green leaves full of minerals and vitamins with various flours in winters, and they turn out to be a wholesome flat bread delicacy.

Ingredients
Serves : 2
2 cups whole wheat flour
1/4 tsp salt (or as needed for taste)
1/2 tsp chilli powder
1/2 cups water or as required (or as needed to make a pliable dough. might vary depending on the quality of flour)
1/4 tsp ajwain/carrom seeds
1 cups bathua/chenopodium purée ( bathua leaves boiled and pureed in mixer)
1/2 tsp garam masala
1 tsp ghee or oil for frying
Directions
Mix the flour , ajwain seeds, garam masala chilli powder and salt in a bowl
add chopped leaves of methi and bathua purée little at a time to the flour until it comes together into a pliable dough.
The final consistency should not be too tight or too soft.
Knead it well until smooth.
Apply some oil or ghee on palms and make lemon sized balls out of it.
Roll out paranthas of around 6 inches diameter, heat a tawa and shallow fry , turning from time to time until they come out crispy and golden.
Serve crisp and hot with any curry, raita or pickle. Enjoy endlessly...
