Ingredients

Serves : 4
  • 200 gms karela (bitter gourd/ pavakkai) tender, chopped into 1 inch long pieces


  • 2 tbsp curd (dahi / yogurt)


  • 1/4 tsp turmeric powder


  • 1 tsp mustard seeds


  • 1 tsp cumin seeds


  • 2 nos dry red chillies


  • 1 nos onion , thinly sliced


  • 4 nos garlic cloves


  • 1 sprig curry leaves


  • 1 tsp everest teekha lal red chilli powder


  • 1 tsp garam masala


  • 1 tsp amchur powder


  • 1 tsp jaggery


  • 1 tbsp coriander leaves , finely chopped

Directions

  • Firstly cook the bitter gourd in a pressure cooker along with yoghurt, 2 tablespoons water, turmeric powder and 1/4 th teaspoon salt upto one whistle.
  • Switch off the heat and let the pressure releaseby itself and keep aside.
  • Heat oil in a wok, splutter mustard seeds, cumin seeds and dry red chillies until they get roasted.
  • Now add the sliced onion, garlic cloves curry leaves and sauté for 2 minutes until the onions become translucent
  • Add the cooked bitter gourd and stir fry over medium heat for 5-10 minutes till the bitter gourd pieces start to turn brown and cooked softer.
  • Once it is cooked well, add the red chilli powder, amchur powder, garam masala, jaggery and salt to taste.
  • Continue to stir over high heat for 5 minutes until you get a nice dark golden colour.
  • Add finely chopped coriander, mix well and turn off the heat.
  • Serve the Andhra Style bitter gourd/Kakarakaya Vepudu with hot rice and ghee and tomato rasam
