Remove the skin of the ginger and cut into small pieces.
In a thick bottomed pan add 2tbs of coconut oil and fry the ginger pieces and green chillies till golden brown.
Crush the fried ginger chilli mix
Crush the jaggery into small pieces and boil it alng with a glass of water.Strain it and keep aside.
Add some water to the tamarind and squeeze it to get the pulp.
In a thick bottomed pan add the jaggery water ,tumarind pulp and let it boil.
Fry chilly powder,fenugreek powder, asafoetida, turmeric powderand add to the boiling jaggery mixture.
Add the crushed ginger to the above mixture along with a pinch of salt.
Cook it in simmer flame until the mixture become little thick .
In a pan pour 1tbs of oil and put mustared seed,fennugreek seed.curryleavesand fry till the mustard bursts.Add this to the ginger curry.
Decorate the curry with curry leaves.Now the delicious Kerala inchi curry is ready to serve.
