Wash the baingan and apply 3_4 drops of oil on it and roast it on direct flame for 6_7 min.till soft from inside
Then remove the black skin of bangan
And mash the baingan with knife or spatula
In a pan add oil,heat it add mustard seeds,asafetida,and ginger,garlic,chilly paste
Then add onions and cook for 2 min.
Then add chopped tomatoes,cook for 2_3 min.
Then add spinach pury,salt,turmeric powder, spring garlic, garam masala,and mix well
Then add mashed baingan and cook for another3_4 min.
Then serve in serving dish and garnish with chopped coriander
It is traditionally served with papad,masala buttermilk,and with gujarati bhakhri in gujarat
