Ingredients

Serves : 2
  • 250 gms bhindi/lady finger


  • 1 tsp oil


  • 2 nos green chilies, slit


  • 1/4 tsp turmeric powder


  • 1/2 tsp red chili powder


  • 1/2 tsp coriander powder


  • 1/2 tsp cumin seeds


  • 1/2 tsp dry mango powder/amchur


  • 1/2 tsp garam masala powder


  • 1/2 tsp kasuri methi crushed


  • 2 tbsp chopped coriander leaves


  • 1/2 tsp salt or to taste

Directions

  • Rinse the bhindi then wipe them dry with a kitchen towel.
  • Slice off the crown and base tip of each bhindi and then vertically slice them.
  • Heat oil in a thick bottomed shallow frying pan.
  • Add cumin seeds , let it splutter, Add the green chilies, saute ,
  • Add turmeric powder, red chilli powder, coriander powder and sauté until you see oil releasing from the sides.
  • Now add the chopped bhindi and salt and stir very well..
  • Cover the pan with a lid half way to retain the green colour of bhindi and cook the sabji on a low flame
  • Do check after 4 to 5 minutes a couple of times.
  • Once the bhindi is done, add garam masala and amchur powder and kasuri methi.
  • Mix lightly and carefully ,Garnish with coriander leaves and serve bhindi masala fry hot or warm with chapatis and dal.
