Serves 4

  • For Dough.. maida- 1cup

  • Salt - 1/2tsp

  • Ghee- 1tbsp

  • Water- to knead almost 1/2cup

  • For paste.... Maida- 3tbsp

  • Ghee- 1.5tbsp

  • For sugar syrup.... Sugar- 1cup

  • Water- 3/4cup

  • Green cardamom powder- 1tsp

  • Ghee- 1.5cup for deep frying

    In a big mixing bowl add maida, salt, ghee and mix properly. It should get a crumbly texture. Then knead a soft dough by adding water slowly

    In a kadai add sugar and water and allow to boil. Maje a thick sugar syrup to one string consistenty. Add cardamom powder and mix. Keep this syrup warm

    Roll out the dough into a rentagular or square roti, about 1mm thick

    Apply the above paste on the roti evenly

    Now roll the roti to a log

  • 06

    Cut the log into 1inch piece and roll 4 to 5 inch long pheni or khaja

    Heat ghee in a kadai fry 2 to 3 khaja at a time..

    Reduce the flame to very slow. In this process khaja will be cooked from in side also.

    Remove from ghee and keep aside

  • 10

    Now put the khaja in sugar syrup to have a coat and keep on a colander

  • 11

    You can soak it sugar syrup to have a soft khaja

    Cool the khaja and store in an airtight container
