Description

Here's a very popular  Assamese traditional chicken recipe with broken rice. The traditional recipe goes without any greens (well, perhaps some coriander as garnish) but I wanted to add some colour to my dish and since I loveeeee greens, I added two hands full of it :) I have used Joha rice, a special class of Sati rice, famous for its sweet aroma and delicate texture. It had also gained a special mention in Ramayana for it highly inviting aromatic properties; of the many tricks applied by Ravana to awaken his brother Kumbhakarana, a plate of tempting Joha Rice was one.

Ingredients

Serves : 4
  • 500 gms chicken


  • 1/2 cups herbs: spinach, dill leaves, spring onion, coriander


  • 200 gms rice soaked overnight or atleast 3to 4 hrs and grind coarsely.


  • 2 nos onion medium-sized, finely sliced


  • 2 tbsp ginger garlic paste


  • 1 tsp fenugreek (optional)


  • 3 nos finely chopped green chillies.


  • 2 nos tomatoes


  • 1/2 cups ginger leaves


  • 1/2 tsp turmeric


  • 3 tbsp mustard oil


  • 1/2 tbsp salt

Directions

  • Saute the herbs with some crushed garlic and red chilies.
  • Set Aside.
  • Temper the mustard oil with fenugreek and green chillies
  • Add the sliced onions and saute it to a nice brown colour.
  • Add the ginger garlic paste, cook on a medium heat till the spices are well cooked.
  • Add in the chicken, mix well and cook it on low to medium heat for approximately 10 to 15mins with the lids on.
  • Add 4 cups of hot water and bring the mixture to a boil.
  • Then slowly add the broken rice, till the water develops a thick consistency.
  • Its advisable to not put the entire amount of pounded rice at one go.
  • Add the sauteed greens.
  • Simmer with the lids on for another 5 to 7 mins.
  • Garnish with fresh coriander
