Ingredients

Serves : 8
  • to make the dough: 1 cup all purpose flour


  • 1/2 tbsp ghee


  • 1/4 cup or more cold water to make the dough


  • for the paste: 1/2 tbsp rice flour


  • 1/4 tbsp ghee


  • 1/4 tbsp oil


  • for sugar syrup: 3/4 cup sugar


  • 1 cup water


  • 2 cups oil for deep frying


  • 1 tbsp extra all purpose flour for dusting

Directions

  • firstly, in a bowl take flour and ghee
  • crumble and mix well
  • now add water and knead a smooth and soft dough
  • cover and rest the dough for 15 minutes
  • after 15 minutes, knead the dough again for 1 minute
  • to make the paste, mix rice flour, ghee and oil and make a smooth paste
  • on the kitchen counter, sprinkle little flour
  • pincg a dough ball and roll it thin on the counter
  • make 4 thin rotis like this
  • apply the prepared paste on first roti
  • keep the second on top of this
  • apply the paste again
  • keep the third roti on top
  • again apply the paste on third roti and keep the fourth roti on top
  • roll this into a log
  • i made 8 rotis out of this dough and 2 logs
  • now with a knief cut the log diagonally
  • now take each piece and press it lightly on your palm
  • heat oil for deep frying in a kadai
  • deep fry all the khaja on low flame till golden brown and crisp
  • meanwhile make the sugar syrup
  • in a pan add water and sugar
  • boil the sugar syrup until 1 string consistency is attained
  • switch off the flame and keep aside
  • when khaja becomes golden brown and crisp, remove from oil and drop the khaja in sugar syrup
  • let it soak in warm syrup for 5 minutes
  • drain these and arrange on a plate
  • once cooled, enjoy!
