Ingredients

Serves : 3
  • For Chettinad Egg Fry : 3 hard boiled eggs


  • 2 tbsps Oil


  • 1/2 tsp mustard seeds


  • 1 sprig curry leaves


  • 1 Onion chopped


  • 2 green chillies chopped


  • 1 tsp ginger garlic paste


  • 1 tomato chopped


  • 1 tsp Salt or as per taste


  • For Roasting and grinding: 2 dry red chilly


  • 1 tsp Peppercorns


  • 1 tsp fennel seeds


  • 1 tbsp coriander seeds


  • 1 small stick cinnamon


  • For Dal Fry : 1/2 cup dal


  • 1 medium Onion chopped


  • 1 green chilly chopped


  • 1/2 tsp mustard seed


  • 1/2 tsp Cumin seeds


  • 2 garlic cloves sliced


  • 1 sprig curry leave


  • 1/2 tsp turmeric powder


  • 1/4 tsp Chilly powder


  • 2 tbsp Oil


  • 1 tbsp salt or as per taste


  • 2 cups Water or as required

Directions

  • Instruction for Chettinad Egg Fry: First dry roast the ingredients mentioned in the roasting and grinding list till it start to get a nice aroma. Let it cool down and grind them a fine powder. Keep aside.
  • Heat oil in a pan. Add mustard seeds, curry leaves, turmeric powder and saute for a min.
  • Add onion, green chilly, ginger garlic paste, salt to taste and saute for about 2 mins. Add tomatoes and saute till it turns mushy.
  • Add the grounded masala, mix well and saute for a min.
  • Take the hard boiled egg and cut into halves. Add them to the pan and mix well with the masala.
  • With the help of a stapula break the eggs roughly. This step can be ignored and you can keep the eggs as it is. Roast the egg mixture in medium heat for couple of mins and take off the heat.
  • Instructions for Dal Fry : Heat oil in a pressure cooker. Add mustard seeds and cumin seeds and let it crackle.
  • Add onion, curry leaves, garlic, salt to taste and saute for about 2 mins. Add turmeric powder, chilly powder and saute for a min
  • Add the washed dal and saute for a min. Add required water and pressure cook for 3-4 whistles and take off the heat.
  • Serve the chettinad egg fry with steam rice and dal fry. Enjoy
