Zero Oil Chicken Stew

Ingredients

Serves : 3
  • 300 gms Chicken


  • Red/Green Chilli 2 chopped diagonal


  • 1 Small Tomato finely chopped


  • 1 Small Onion thinly sliced


  • 1 tsp Chilli flakes


  • 4-5 Garlic cloves finely chopped


  • 1 inch Ginger finely chopped


  • 4-5 French Beans cut into diagonal


  • 1/4 cup Capsicum cut into cubes


  • 1 Carrot cut into big chunks desired shape


  • 1 tsp Sichuan Peppercorns dry roasted and coarsely crush


  • 2 tbsp Rice flour (if not you can use corn flour)


  • 2 tbsp Spring onionchopped diagonal


  • 2-3 tbsp coriander leaves chopped


  • 1 tbsp salt or as per taste


  • 2 cups Water or as required

Directions

  • Take the chicken in a pan. Add the thinly sliced onion, salt, tomato, chilli flakes and saute it in a low heat. Cover the pan with lid and let the chicken cook in it's own juice for around 5 mins.
  • Now pour enough water and continue to cook for another 10-15 mins. Cooking time depends upon the chicken you are using.
  • Add the chillies, chopped ginger, garlic, carrot, beans and capsicums. Let it cook for 2-3 mins.
  • Now mix the rice flour in some water and pour into the chicken. Stir continously for around 2 mins to prevent from forming lumps.
  • Add the spring onion, coriander leaves and coarsely crushed sichuan pepper. Give a quick stir and take off the heat.
  • Enjoy with piping hot steam rice.
