Black Sesame Pork  And Boiled Dal & Greens With Steamed Rice - A Soulful Plate

Ingredients

Serves 3

  • For Pork : Pork - 300 gms

  • Black sesame - 4 tbsp

  • Bamboo Shoots - 2 tbsp

  • Dry Red Chilly - 10 nos

  • Ginger - 1 inch

  • Garlic - 5-6 cloves

  • Sichuan peppercorns - 1 tsp dry roasted

  • Salt - 1 tbsp or as per taste

  • Water - 1-2 cups as required

  • For Boiled Dal & Greens : 1/ 2 cup Dal

  • Mustard greens- 1 cup chopped

  • Salt - 1 tsp or as per your taste

  • Water 2 cups or as required

  • Green Chilly - 1 slit

Directions

    Method for boiler dal - Wash the dal and add them in a pressure cooker.

    Add water , salt and pressure cook for 4-5 whistles.

    Open the cooker and add the mustard greens , green chilly and cook for 3-5 mins and take off the heat.

    Method for Sesame Pork : In a bowl take some hot water and soak the dry red chillies for few mins. Drain the water and pound them in mortar and pestle.

    Dry roast the black sesame seeds till it starts to crackle. Pound them coarsely in mortar and pestle and keep aside.

    Coarsely grind the ginger garlic just to open the flavor and keep aside.

    Dry roast the sichuan peppercorns and crushed them. Keep aside.

    In a pan add the pork, pounded red chillies, salt to taste. Add enough water and bring to boil. Cook for about 10-15 mins, then add the bamboo shoots and continue to cook.

    When the pork is 80% cooked, add the black sesame and ginger garlic and continue to cook stirring occasionally till the pork is completely cooked and the moisture evaporates completely.

    Add the crushed roasted sichuan peppercorns, give a quick stir and take off the heat.

    Serve the black sesame bamboo shoot pork and boiled dal and greens with piping hot steam rice. Enjoy
