Avocados ,ripped andf mashed 2 nos
Black beans(rinsed and drained) 1/2 cups
Fresh corn 1/4 cups
Onion,finely diced 1 nos
Tomatoes,finely diced 2 nos
Jalapeno,deseeded and minced 1 nos
Fresh Cilantro 1/2 cups
Lime Juice 2 tbsp
Fajita seasoning, to taste 1 tsp
For Bean Corn kebab:Black Beans(Boiled & Mashed) 1 cups
Onion,finely Chopped 1 nos
chat masala 1 tsp
Sweet Potatoes/Yams,Mashed 2 nos
Corn,boiled and mashed 1 cups
Garlic,grated 1 inch
Jalapenos ,chopped 2 tbsp
Salt to taste 1 tsp
Paprika to taste 1 tsp
Red Chilli Flakes 1-2 tsp
Fresh Coriander,fidtful 1 nos
Fresh Bread Crumbs 2-3 tbsp
Oil 1-2 tbsp
Guacamole:Remove the flesh of the avocados. Mash the avocados with the back of a fork. Put the avocado and lime juice in a bowl. Combine all ingredients in it.
Mix to combine. Guacamole is ready.
Kebabs:Take all the ingredients in a mixing Bowl and It is a base of Beans, corn & yams with the coating of bread crumbs.
Heat a skillet on medium heat and brush it slightly. Place kebabs on it and brush the top too.
Turn it carefully after 2-3 minutes or until golden in color.
Cook from both side.
Assembling: Prepare the Base with tamarind sauce place kebabs and now top it with guacamole.
