1 cup Basmati rice
1/2 kg chicken
5 big tomato puree
3 onion puree
4 tsp ginger garlic paste
1 tsp Salt to taste
2 tsp red chilli powder
2 tsp coariander powder
2 tsp garam masala powder
1/2 cup pure ghee
1 tsp turmeric powder
2 medium size fish Hilsa (Any of your choice)
1 cup whole wheat flour
1 cup All purpose flour
1 tsp chopped fresh coariander
1 cup Arhar Dal
1/2 cup Chana dal
1 tsp ginger garlic and green chilli paste
2 tsp Ghee for tempering
1 tsp red chilli powder ,turmeric,coariander powder
1/2 kg okra
1/2 cup yogurt
1/4 cup mustard oil
For Chicken :
Marinate chicken with 1 tsp ginger garlic paste ,red chilli powder and yogurt and keep it for 15 min
In a deep pan heat ghee add whole spices then ginger garlic paste cook till brown then add onion puree and cook it till ghee seprates then add tomato puree and cook it till ghee seprates.
Then add Powdered spices and mix well then add chicken and mix it well then cook it on medium flame for 15 min then cook it on low flame for 20 min add 1 cup water ,salt to taste and cook it till chicken become soft and gravy become thick..
For Mughlai smoked Dal
In a pressure cooker add Arhar dal and chana dal add 2 cup water and add ginger ,garlic paste and onion and tomato ,then add salt,turmeric,red chilli and pressure cook till 2 whistle .
Heat ghee add 3 tsp coariander powder,garam masala powder ,red chilli powder and pour over lentil
Heat one charcoal piece over heat till chared then put this in bowl and add 1 tsp ghee and close lid till smoke evaporates.
For Masala Roti
In a bowl add whole wheat flour,all purpose flour and add fresh coariander leaves,salt, red chilli powder,cumin seeds and kneed a soft dough.
Make small ball and make small round chapati and cook it on tawa from both side then spread ghee.
For Lady finger (Okra)
slit lady fingers into half
Heat oil in pan add cumin seeds and cook lady fingers for 15 min till crisp then add 1 tsp red chilli powder, coariander powder,chaat masala ,garam masala and salt to taste ,mix all well
For corn salad
Dessed 1 corn and boil it for 5 min
Chop 1 tomato ,onion, cucumber
Take a bowl add all chopped vegetables and corn mix well add lemon juice,salt ,black pepper and mix well then add 2 tsp olive oil mix well
Heat pan add 1 tsp oil add cumin seed then add 1 cup rice and add 2 cup water and cook it on medium for 5 min till water remain half then cover it and cook till all water evaporates..
Marinate fish with 2 tsp ginger garilc green chilli paste and 1 tsp turmeric ,red chilli ,coariander
Heat mustard oil in pan then add fish and cook it on medium from both side till crisp.
Take a big thali and serve each dish with Gulam jamun ,serve it hot..
