Ingredients

Serves : 6
  • 2 cup maida


  • 1/4 cup ghee for moyan


  • 1 tsp salt


  • 1/2 tsp black salt


  • 1 cup urad dal soaked


  • 1/2 tsp red chilli pwd


  • 1/2 tsp chaat masala


  • 1/2 jeera powder


  • 1/2 tsp heeng


  • 1 cup whisked curd


  • 2 tbsp tamarind chutney


  • 2 tbsp green chutney


  • 1 tbsp Chopped coriander


  • 1 tbsp sev


  • 1 lit Oil for frying


  • 1 cup chopped boiled potato


  • 1/2 tsp dry mango pwd


  • 1/2 haldi powder


  • 1 tsp coriander powder


  • 1/2 garam masala pwd


  • 1 tsp fennel seed powder

Directions

  • Drain water from dal and grind it
  • Add pinch of salt and ghee in maida and mix it nicely till maida is coated with ghee and resembles like bread crumbs
  • Add water and knead a soft dough and let it rest for 10 minutes
  • Heat one tbsp oil in a wok and add heeng, jeera as it crackles add haldi, coriander pwd, red chilli pwd, garam masala, fennel seed powder and salt and stir for a minute
  • Than add grinded dal and stir continously
  • Add dry mango powder and mix it switch off the flame and let it cool
  • Take a lemon size ball from dough and roll it in a small roti make cavity and fill one spoon filling in it and seal it make all the kachori like this
  • Heat oil in a wok take one kachori and roll it slightly and fry it on medium flame
  • For assembling put one kachori on the serving plate and break it in middle with your your fingers and put chopped potatoes in it
  • Put spoon full of curd on it than sprinkle black salt, red chilli pwd and jeera powder on it
  • Put both types of chutney than curd and salt and chaat masala
  • Garnish with chopped fresh green coriander and sev and serve it with love
