Take the flour , oil and salt in a large bowl, and mix together with fingers. Gradually add the water to make a soft but not sticky dough. Keep aside for 15 minutes.
In the mean time mix stuffing ingredients and keep aside.
Now divide the dough into small, equal-sized balls. Roll them out into small poori.
Set this poori on gujhiya mould and Stuff each disc with a sizeable portion of the stuffing. Apply some water around the edges of each poori and seal it completely.
Heat the oil and deep fry gujhiyas on low flame for 5-8 minutes or till it becomes crisp and golden. Add 2-3 pieces at a time.
Now let them cool completely.
Once cooled down , now half cover them with melted chocolate and garnish with colourful sprinkles.
Chocolate gujhiyas are ready to relish.
