Ingredients
Serves 4
250 grams cauliflower
200 grams potatoes
3 medium size tomatoes
1 inch chopped ginger
2 chopped green chili
2 tbs oil
2 tbs chopped coriander
400 grams wheat flour
1/2 tsp ajwain (oregano) seeds
1 tbs oil
500 grams oil for frying puri and veg
1 tbs salt or as per your taste
1/2 tsp red chilly powder
1/2 tsp garam masala
1/2 tsp turmeric powder
Directions
cut cauliflower and potatoes in same sizes and wash with clean water
not take a pan put oil for frying let it hot
then fry cauliflower and potatoes on full flame until soft
now take another pan put 2 tbs oil let it hot now add ginger and green chili
cook for 1 minute on medium flame
then add chopped tomatoes and cook on low heat
add salt, turmeric powder, red chili powder and give a good mix
cook until masala start leaving sides of pan
now put fried cauliflower and potatoes mix nicely and cover it with lid let it cook on low heat for 5 minutes stir occasionally
now add 1/2 tsp garam masala and mix off heat
garnish with chopped coriander leaves
now take wheat flour in a mixing bowl add 1 tbs oil and 1/2 tsp salt and ajwain mix very well
add water in that and make a dough not very soft not very hard let it rest for 10 minutes
now make balls with dough and roll puri with roll pin
put oil in pan for frying puri let it hot very well now fry puri one by one from both sides
serve puri with cauliflower veggies
