Spinach Bunch,washed and dry 1 nos
Olive oil 2 tbsp
Onion ,chopped 1/2 cups
Eggs 2 nos
Milk 1/2 cups
egg curry masala 1 tsp
Chopped cooked chicken, optional 1 cups
salt 1/2 tsp
Black pepper 1/4 tsp
In a large skillet, saute the onion in oil until tender.
In a large bowl, beat eggs and milk.
Stir in the chicken if desired, 1/2 cup spinach, salt and pepper and masala.
Add this to the skillet. Cover and cook over medium heat for 8-10 minutes or until a knife inserted in the center comes out clean. Cut into wedges.
