In a saucepan heat 1 cup of water.
Add 1/4 th cup of butter, 3 tablespoon of sugar and a pinch of salt
Mix and cook till butter and sugar dissolve completely.
Switch off the flame and add 1 cup of All purpose flour.
Mix well to form a dough.
Add 2 beaten eggs.
Incorporate the eggs well to the dough by mixing.
It will form a soft dough. Keep aside to cool.
Transfer the dough into a cookie maker with star nozzle.
Heat 2 cups of oil in a kadai or pan.
Now squeeze the dough to medium hot oil to form churro shapes.
Cook in medium low heat, stirring occasionally till light golden brown.
When all churros are fried make chocolate ganache.
In a heavy bottomed pan heat 1/4 th cup butter, cream and grated chocolate.
Add sugar and cocoa powder . Mix well.
When all the ingredients incorporate nicely, and the mixture becomes shiny remove from heat.
Transfer the ganache to a cup.
Take the fried churros and dip them to ganache one by one to coat 1/2 of the churro stick.
Keep them in the refrigerator for about 30 minutes to set the ganache.
Arrange in a serving dish, dust with icing sugar and serve with a cup of coffee or hot chocolate ganache.
