Vegetarian grilled Taquitos

Ingredients

Serves 4

  • 1 cup Button Mushroom finely diced

  • 1 Red bell pepper finely diced Medium size

  • 1 Cup Cooked Red beans/Rajma.

  • 1 Tbsp Lemon juice

  • 1 Tsp Cumin

  • 1/3 cup Cream cheese

  • 6 Tortillas

  • Salt as per taste

  • 1/4 cup Chopped fresh coriander

  • 1 tbsp Olive Oil or more for brushing grill pan

Directions

    Heat a pan on medium heat and add 1 Tbsp oil.

    Add bell pepper and mushroomfor 2-3 minutes until tender

  • 03

    Add cream cheese,red beans, lemon juice and cumin.Stir to mix well.

    Add coriander leaves and mix.

    Add 2 Tbsp of the mixture on each tortilla. 6Heat grill pan on medium heat,brush 2Tsp of oil on hot pan.

    Heat grill pan on medium heat,brush 2Tsp of oil on hot pan.

    Wrap tightly and place the seal side down on hot grill pan.

    Same way prepare all taquitos and grill on low to medium heat.

    Grill until crispy and golden brown.

  • 10

    Serve with salsa and sour cream.
