  • Bottle gourd - 1 pc., Chopped tomatoes - 2 pcs Chopped onion - 2 pcs Crushed garlic - 4 to 5 pods Chopped spring onion / leaves - 1/2 cup Oil - 1tbsp Red chilli powder - 1 tbsp Turmeric powder - 1tsp Dhaniya jeera powder - 2 tbsp Pav bhaji masala / garam masala - 1/2 tbsp Mustard seeds - 3/4 tsp Jeera - 3/4 tsp Hing - 3/4 tsp Salt to taste Chopped coriander leaves - 2tbsp.

    Cut bottle gourd into small pcs and pressure cook for three whistles with very little water. Remove excess water once cooked and smash it. Heat oil in a pan. Add mustard seeds, jeera, Hing, garlic and onion. Add all the masalas and fry for 2 mins then add tomatoes and fry till all gets mixed well. Add salt and smashed bottle gourd to it. Mix all well, cover the and cook for 5 mins. Sprinkle coriander leaves and the yummy bhurta is ready to serve with bajra or jowar roti.
