Ingredients

Serves 3

  • boneless chicken 250-300 gms

  • coconut oil or olive oil 2-3 tbsp

  • small onions finely chopped 1 nos

  • garlic cloves minced 2-3 nos

  • ginger chopped 1 inch

  • thick coconut milk 1 cups

  • shredded carrots 1/2 cups

  • chopped spinach 1/4 cups

  • pepper 1/2 tsp

  • coriander powder 1/2 tsp

  • coriander powder 1 tsp

  • coriander powder 1 tsp

  • chopped cilantro 2 tbsp

  • lemon juice 1/2 tsp

  • Curry powder: turmeric 2 tsp

  • roasted coriander seeds 4.5 tsp

  • roasted coriander seeds 1/2 tsp

  • peppercorns 1/2 tsp

  • peppercorns 1/2 tsp

  • peppercorns 1/4 tsp

  • peppercorns 1/4 tsp

  • roasted cumin seeds 1.5 tsp

Directions

  • 01

    Blend all ingredients mentioned under curry section to fine powder. Store in airtight container

    Heat oil in a pan. Add ginger garlic and onions. Saute until onions are tender

    Add chicken and stir fry for 5 minutes

  • 04

    Lower the heat, add coconut milk, carrots, salt, 2 tbsp curry powder and pepper. Mix well. Any excess curry powder can be stored for future use

    Cover and cook stirring occasionally until gravy starts thickening

    Add spinach and cook until it starts wilting

  • 07

    Add lemon juice and sugar. Mix well. Check for seasoning

  • 08

    Sprinkle with cilantro and serve
