Louki, coriander Tihri in Butter Milk

Ingredients

Serves 4

  • Rice, split wheat, moong dal 1/2 cups

  • Butter milk 3 cups

  • Water 1 cups

  • Garlic chopped 1/2 tsp

  • Grated ginger 1 tsp

  • Onion finely chopped 1 tbsp

  • Cumin seeds 1 tsp

  • Maggie Masala e magic 1 tsp

  • oregano 1/2 tsp

  • 1 1 pinch

  • Ghee 2 tbsp

  • Chopped spring onion 2 tbsp

  • Lauki 200 gms

  • Coriander leaves 1/2 cups

    First peel off lauki and grate it. Wash coriander leaves and chop finely.

    Now heat 1 tablespoon of ghee in a pan.Add grated lauki, coriander leaves and spring onions in it.

    Keep Sauting on medium flame till vegetables become soft and bit crunchy.Add desired salt and chilly. Switch off the flame.keep aside these vegetables.

    Now heat remaining ghee in pressure cooker.

    Add cumin seeds and let them crackle.Now add onions, ginger paste and garlic. Keep sauting till ghee releases.

    Now add rice, split wheat and moong dal in it. Saute for 2 minutes.

    Add butter milk and water in pressure cooker. Stir nicely.

    Add desired salt and chilly.Now lid on the pressure cooker. Let the tihri cook on slow flame for 20 minutes.

    After 20 minutes switch off the flame and let the steam release it self.

    Now open the pressure cooker and add oregano and maggi masala e magic. Mix nicely.

    Now add cooked vegetables and mix again. Serve hot with any Chutney or enjoy it as it is.

    Add ghee on tihri while serving to enhance its flavours.
