Clean and wash rice,. Boil 5-6 cups water with 2 tsp salt in a large pan
Add rice. Cook till done. Do not over cook
Strain rice in a colander. Keep aside. Cool it by spreading on a tray
Mix lemon juice, haldi, sugar and salt together in a small bowl
To temper the rice, heat oil in a kadhai
Reduce flame. Add mustard seeds, dal and red chillies
Cook on a low flame till dal just starts changing colour. Do not let the dal turn brown
Add curry leaves. Mix
Cover and simmer on low flame till dal turns soft and the water dries
Separate the rice grains of the cooked rice with a fork
Add rice and mix carefully till well mixed. Stir gently for 2-3 minutes. Serve hot
