Heat oil in a pan and add mustard seeds, when it splutter add curry leaves,ginger garlic paste, chillies and saute for a minute.
Add onions and salt. Wait till onion turn translucent.
Peel and mash potatoes and add into the pan.
Add some haldi, red chilly powder and mix well.
Meanwhile grease a tawa and pour some dosa batter to make mini uttapam. Add some potato mixture on top of it and press gently.
Add some oil and cook on both sides.
garnish with coriander leaves and Serve hot with any chutney.
