Cooked Rice 2 cups
ghee or clarified butter 1 tbsp
cumin seeds 1 tsp
cardamom 2 piece
cloves 2 piece
cinnamon stick 1 inch
star anise 1 nos
large onion, chopped finely 1 nos
french beans 1/2 cups
carrot, chopped into half inch pieces 1 nos
green peas 1/2 cups
sweet corns 1/4 cups
Coriander paste (1 cup coriander leaves, half a cup mint leaves, half an onion, 2 cloves of garlic, 3 green chillies & one inch piece of ginger ground to paste with juice of half a lime added) 1/2 cups
coriander powder 1/2 tsp
cumin seed powder 1/2 tsp
Coriander leaves to garnish 1 tbsp
Salt or to taste 1 tsp
cashew nuts 8-10 nos
Heat oil or ghee in a pan fry cashew nuts and keep it a side
Heat oil and ghee in a pan and add cumin seeds, cardamom cloves, cinnamon sticks and star anise.
Cook till cumin seeds turn slightly brown and onions and saute them for a minute.
Then add capsicum, french beans,sweet corns, carrot and green peas to the it and let it cook.
Add 2-3 tbsp. water and salt and cover the pan with a lid and let the vegetables cook for 2-3 minutes.
Once done, add the coriander paste to the cooked vegetables and cook it for 2 minutes.
Then add coriander powder, cumin powder and the rice.
Mix it nicely and add salt to taste, coriander leaves, 1 tbsp water and toss it lightly with 2 spoons. Cover with a lid and let it simmer for a minute.
Delicious Coriander Rice is ready to be served! Toping fried cashew nuts and serve it enjoy!
