Ingredients

Serves : 2
  • 2 cups cooked rice


  • 1 tbsp ghee or clarified butter


  • 1 tsp cumin seeds


  • 2 piece cardamom


  • 2 piece cloves


  • 1 inch cinnamon stick


  • 1 nos star anise


  • 1 nos large onion, chopped finely


  • 1/2 cups french beans


  • 1 nos carrot, chopped into half inch pieces


  • 1/2 cups green peas


  • 1/4 cups sweet corns


  • 1/2 cups coriander paste (1 cup coriander leaves, half a cup mint leaves, half an onion, 2 cloves of garlic, 3 green chillies & one inch piece of ginger ground to paste with juice of half a lime added)


  • 1/2 tsp coriander powder


  • 1/2 tsp cumin seed powder


  • 1 tbsp coriander leaves to garnish


  • 1 tsp salt or to taste


  • 8-10 nos cashew nuts

Directions

  • Heat oil or ghee in a pan fry cashew nuts and keep it a side
  • Heat oil and ghee in a pan and add cumin seeds, cardamom cloves, cinnamon sticks and star anise.
  • Cook till cumin seeds turn slightly brown and onions and saute them for a minute.
  • Then add capsicum, french beans,sweet corns, carrot and green peas to the it and let it cook.
  • Add 2-3 tbsp. water and salt and cover the pan with a lid and let the vegetables cook for 2-3 minutes.
  • Once done, add the coriander paste to the cooked vegetables and cook it for 2 minutes.
  • Then add coriander powder, cumin powder and the rice.
  • Mix it nicely and add salt to taste, coriander leaves, 1 tbsp water and toss it lightly with 2 spoons. Cover with a lid and let it simmer for a minute.
  • Delicious Coriander Rice is ready to be served! Toping fried cashew nuts and serve it enjoy!
