Ingredients

  • 1 cup rice, soaked for 30 minutes

  • 3/ cup coconut milk

  • 1 cup water

  • 1 lemon grass, bruised

  • 1

  • 5-6 kaffir lime leaves

  • 1/2 tsp. salt or to taste

  • 1-2 tbsp. roasted peanuts or as required

  • 1-2 tbsp. crispy fried anchovies or as required

  • 1 small cucumber. sliced

  • 1 tbsp. chili sambal

  • 1 boiled egg

Directions

    Pressure cook the drained rice in coconut milk, water, lemongrass, galangal, kaffir lime leaves and salt to taste for 2 whistles. Keep aside.

  • 02

    When serving, place the rice in the centre of the plate and top it up with the chili sambal. Place the peanuts, anchovies, cucumber and egg all around and garnish with coriander leaves. A perfect one-pot meal.
