In a non stick pan, melt sugar with water until it dissolves and caramelize completely. Switch off
Add whipping cream, it will bubble up. Mix well. Return pan to flame
Whisk continuously until smooth. Switch off
Add salt, Vanilla extract and chopped chocolate. Mix well
Pour in bowl. Allow to cool completely. Cover with cling wrap. Refrigerate for 2 hours
Grease palms , take spoonful of mixture. Shape like balls.
In a bowl, add cocoa powder or confetti or chocolate shavings or nuts as desired
Roll the balls over it and place on serving plate
Serve cold
