Ingredients

Serves 3

  • 500 grams chicken

  • 1 cup rice

  • 2 onion sliced

  • 2 tomatoes chopped

  • 3 tablespoons curd

  • 2 boiled eggs

  • juice of 1 lemon

  • 1 tablespoon ginger and garlic paste for marination

  • 1 tablespoon ginger and garlic paste for masala

  • 1 teaspoon chop green chillies

  • 1 teaspoon cumin seeds

  • 2 bay leaves

  • 2 black cardamom

  • 2 green cardamom

  • 1 inch cinnamon stick

  • 4 cloves

  • 2 teaspoon garam masala powder

  • 1 teaspoon coriander powder

  • 1/2 teaspoon turmeric powder

  • 1 teaspoon red chilli powder

  • 1/2 cup freshly chopped coriander leaves

  • 1/2 cup freshly chopped mint leaves

  • 2 tablespoon refined oil

  • 1 teaspoon salt (to taste)

Directions

    Wash the Rice and soak it in enough water for 20 minutes

    for marination: in a bowl add washed and dried chicken, curd, ginger & garlic paste, lemon juice and keep it in fridge for 45 minutes.

    in a heavy bottom Pan heat refined oil.

    now add all whole spices and let them splatter

    now add sliced onions and saute till golden brown in colour.

    now add ginger and garlic paste and green chillies and saute for a minute.

    now add chopped tomatoes and let them saute till little mushy.

    now add marinated chicken and mix nicely

    now add salt, turmeric powder, red chilli powder, garam masala powder, coriander powder and saute for two minutes.

    now add freshly chopped coriander leaves and mint leaves and mix nicely. let it cook for 15 to 20 minutes on low to medium heat covered till chicken is done.

    now add rice and one and half cup water

    turn the heat to high and give one boil, after that let the rice cook on low to medium heat for 10 minutes covered.

    after 10 minutes again add handful of freshly chopped coriander leaves and mint leaves and mix it gently and again let it cook for at least 5 minutes or till the Rice is cooked properly.

    when the rice is cooked, switch off the flame and add one and a half boiled egg cut into slices, mix gently and keep it covered.

    chicken pulao is ready, garnish it with freshly chopped coriander leaves, mint leaves and boiled egg. Serve hot with pudina raita and salad.
