Ingredients

Serves : 3
  • 500 grams chicken


  • 1 cup rice


  • 2 onion sliced


  • 2 tomatoes chopped


  • 3 tablespoons curd


  • 2 boiled eggs


  • juice of 1 lemon


  • 1 tablespoon ginger and garlic paste for marination


  • 1 tablespoon ginger and garlic paste for masala


  • 1 teaspoon chop green chillies


  • 1 teaspoon cumin seeds


  • 2 bay leaves


  • 2 black cardamom


  • 2 green cardamom


  • 1 inch cinnamon stick


  • 4 cloves


  • 2 teaspoon garam masala powder


  • 1 teaspoon coriander powder


  • 1/2 teaspoon turmeric powder


  • 1 teaspoon red chilli powder


  • 1/2 cup freshly chopped coriander leaves


  • 1/2 cup freshly chopped mint leaves


  • 2 tablespoon refined oil


  • 1 teaspoon salt (to taste)

Directions

  • Wash the Rice and soak it in enough water for 20 minutes
  • for marination: in a bowl add washed and dried chicken, curd, ginger & garlic paste, lemon juice and keep it in fridge for 45 minutes.
  • in a heavy bottom Pan heat refined oil.
  • now add all whole spices and let them splatter
  • now add sliced onions and saute till golden brown in colour.
  • now add ginger and garlic paste and green chillies and saute for a minute.
  • now add chopped tomatoes and let them saute till little mushy.
  • now add marinated chicken and mix nicely
  • now add salt, turmeric powder, red chilli powder, garam masala powder, coriander powder and saute for two minutes.
  • now add freshly chopped coriander leaves and mint leaves and mix nicely. let it cook for 15 to 20 minutes on low to medium heat covered till chicken is done.
  • now add rice and one and half cup water
  • turn the heat to high and give one boil, after that let the rice cook on low to medium heat for 10 minutes covered.
  • after 10 minutes again add handful of freshly chopped coriander leaves and mint leaves and mix it gently and again let it cook for at least 5 minutes or till the Rice is cooked properly.
  • when the rice is cooked, switch off the flame and add one and a half boiled egg cut into slices, mix gently and keep it covered.
  • chicken pulao is ready, garnish it with freshly chopped coriander leaves, mint leaves and boiled egg. Serve hot with pudina raita and salad.
