Spinach Khichadi

Ingredients

Serves 2

  • 1 cup Rice

  • 1/4 cup Moong dal

  • 1/2 cup Spinach chopped

  • 1/4 teaspoon asafoetida

  • 1 tablespoon oil or ghee

  • 1 teaspoon cumin

  • 1 teaspoon red chili powder

  • 1/2 teaspoon turmeric powder

  • 1 teaspoon garam masala

  • 1 teaspoon coriander powder

  • 1 teaspoon salt

  • 2 cups boiled water

  • 1 tablespoon peanuts powder

    Wash dal and rice and soak it for 5 minutes.

    Meanwhile, heat ghee or oil in a pressure cooker. Add cumin, asafoetida and spinach to it. And stir it.

    Once the spinach gets soft add soaked dal-rice and stir it for 2 minutes.

    Add all the dry spice powders, salt and boiling water to it.

    Give it a nice mix, cover it and pressure cook it untill 3-4 whistles.

    After that remove it from the flame, allow it to cool and serve it with ghee and some pickle, chutney or raita.

    This is perfect for lunch or dinner. Easy to digest and healthy.
