  • 1 nos eggplant

  • 1 cups chopped spring onion

  • 1 nos tomato chopped

  • 3 nos green chillies

  • 1 tsp crushed peanuts (roasted)

  • 1 tsp turmeric powder

  • 1 1/2 tsp salt to taste

  • 1 tsp mustard seeds

  • 2-3 nos curry leaves


  • Heat oil in a pan and add some mustard seeds and let it splatter.
  • Add curry leaves , green chilly and saute for a minute.
  • Add onion ,tomatoes and let it turn mushy on low flame.
  • Meanwhile wash eggplants and make a slit in it. Add few drops of oil in it and roast it. Remove the cover and mash the eggplant properly. Add some salt on it and keep aside.
  • Add turmeric powder and transfer the mashed eggplant mixture into the pan. Mix it well and cover for a minute.
  • Finally add crushed peanuts and garnish with coriander leaves.
  • Serve hot with bhakari or chapati.
