Ingredients

Serves : 4
  • 2 cup peeled and boiled arbi


  • 1/2 cup peeled and boiled potato


  • 1 teaspoon hing powder


  • 1 teaspoon fennel powder


  • 1 teaspoon cumin seeds


  • 1 tablespoon ginger paste


  • 1 tablespoon red chilli powder


  • 2 teaspoon salt or as needed


  • 1 cup vegetable oil or as needed


  • 2 cups besan/ gram flour


  • 2 teaspoon kasoori methi( dried methi leaves)


  • 1 dry red chili


  • 1 teaspoon turmeric powder

Directions

  • Drain all water from boiled arbi and potatoes. In a mixing bowl mashed potato and arbi nicely so that no lumps remained.
  • Heat 4 tablespoon of oil in a frying pan . Add dry red chili,cumin seeds,hing powder and fennel powder. Stir for 1 minute then add mashed arbi and potatoes. Keep stirring for 5 minutes then add ginger paste,red chili powder, turmeric powder and salt. Keep stirring until the mixture transform like a dough and come together about 10 minutes.
  • Switch off the flame , add kasoori methi and give a stir. Transfer it to a flat plate to cool quickly.
  • In a bowl add besan and with water make batter not very runny or not very thick. Add a pinch of salt and red chili powder.
  • After the mixture cool down make small balls out of it. Now transform those balls to small disc by pressing in hand.
  • Heat sufficient oil in frying pan. Dip arbi mixture disc in besan batter,coat very nicely then drop in hot oil. Fry them light brown in medium flame.
  • Drain them in paper towels to soak excess oil. Arbi fritters is ready . A scrumptious snack which goes very nice with coffee or tea or as a starter.
