Description

The potato bonda gets a makeover for a crispy outer layer with oats while the soft inner layer retains its softness.

Ingredients

Serves : 3
  • 200 gms cooked and mashed potatoes


  • 1/4 cup corn flour


  • 1/2 Cup rolled oats


  • 1 finely chopped onion


  • 1/2 teaspoon turmeric powder


  • 1/2 teaspoon red chilli powder


  • 1 teaspoon chopped ginger


  • 5 curry leaves


  • 1/4 teaspoon mustard seeds


  • 1/4 teaspoon Cumin seeds


  • 250 ml Oil for frying


  • 1/4 teaspoon Asafoetida

Directions

  • In a pan add 2 teaspoon oil and heat. Next add mustard, cumin seeds and asafoetida.
  • After the mustard seeds splutter add ginger, onion and saute till they turn translucent .
  • Now add chilli powder, turmeric powder and 1 tablespoon water and fry it for a minute.
  • Now add mashed potato, salt, curry leaves and mix together while adding 1/4 water. Keep on medium flame and remove from heat when the potato mixture is thick enough to form balls.
  • Heat the oil in a wok for frying.
  • Prepare a thick corn flour slurry by adding 3 tablespoon water.
  • Divide the potato mixture into equal portions and roll out to balls.
  • When the oil is ready for frying, dip the balls into corn flour slurry and roll over on the oats.
  • Now drop the balls in the oil and fry it.
  • After it gets cooked remove from oil and place it on kitchen towels.
