In a pan add ghee and roast the paneer cubes till they get roasted. Remove from and keep aside
In same pan, add oil and add Cinnamon, Cloves and Black Cardamon
Add onion and saute till turns translucent.
Now add the masala powders, coriander powder, turmeric powder, fennel powder, chilli powder, garam masala and 2 tablespoons of water and fry for a minute on low flame.
Now add the sliced brinjal and add salt, now add 1/4 cup water and turn the heat to low and cook with lid for 3 minutes.
Next add coconut milk, keep stirring till it boils. Now add the paneer cubes, sugar and reduce the flame to medium and simmer for 2 minutes.
Remove from heat and serve.
