Description

Brinjal Paneer Fry which  an apt accompaniment  for Jeera rice. A spicy yet with a sweet punch will relish the meal.

Ingredients

Serves : 3
  • 200 gms Sliced Brinjal


  • 100 gms Paneer cut into small cubes


  • 1 Sliced Onion


  • 1 teaspoon Coriander powder


  • 1/2 teaspoon Chilli powder


  • 1/4 teaspoon Garam masala


  • 1/4 teaspoon fennel powder


  • 1/2 teaspoon Turmeric Powder


  • 1/3 cup coconut milk


  • 1 teaspoon coconut sugar


  • 1 tablespoon Cooking oil


  • 1" Cinnamon stick


  • 1 Black Cardamon


  • 2 Cloves


  • 1.5 teaspoon Ghee

Directions

  • In a pan add ghee and roast the paneer cubes till they get roasted. Remove from and keep aside
  • In same pan, add oil and add Cinnamon, Cloves and Black Cardamon
  • Add onion and saute till turns translucent.
  • Now add the masala powders, coriander powder, turmeric powder, fennel powder, chilli powder, garam masala and 2 tablespoons of water and fry for a minute on low flame.
  • Now add the sliced brinjal and add salt, now add 1/4 cup water and turn the heat to low and cook with lid for 3 minutes.
  • Next add coconut milk, keep stirring till it boils. Now add the paneer cubes, sugar and reduce the flame to medium and simmer for 2 minutes.
  • Remove from heat and serve.
