For Idli batter : Rice - 2 1/2 cups Urad dal - 1 cup Salt to taste Oil - 1 tsp Beetroot - 1 small Carrot - 1 small
Directions
Wash n Soak rice n dal individually for 2- 3 hrs. Grind to a smooth paste. Keep it for fermentation for overnight. Grate beetroot n strain it . Keep its juice aside. Cut carrots slices very thin. Take some batter in bowl n add salt. Mix properly. Grease mould. Put batter n carefully pour spoonful of beetroot juice over it. Spread little with stick n make design of ur choice. Also in some batter out carrot slices. Steam it for 8- 10 mins. When done. Let it cool for 2 mins. Take out in serving dish n serve with coconut chutney. Enjoy healthy designer idlis.
