4 peeled potatoes
1 tbsp corn flour
1 tsp Salt to taste
1 tsp mixed herbs
1 tsp oregano
1 tsp peri peri masala
Ice cold water 1 bowl
2 cups Oil for frying
Wash potato and cut it into wedges or thin sticks.
Add all diced potatoes into ice cool water and let it sit for 5 minutes to remove all the starch. It will make the fries crispy.
Heat oil in a pan on high flame. Wipe excess water from the potato with a tissue paper and transfer it into hot oil, fry till it turns golden.
When its half cooked remove it on a plate and let it cool completely. Again transfer into the hot oil and fry untill golden.
Remove on a paper napkin, wipe off the Excess oil and toss it in salt, mixed herbs and peri peri masala (optional).
Serve hot with mayonnese and tomato ketchup.
