In a mixing bowl, take maida, semolina, salt and 2 tablespoons
Mix well everything and knead a semi soft dough using water amd keep it covered aside for rest
Heat 1 tablespoon oil in a pan , add fennel seeds, cumin seeds, carrom seeds and finely chopped onion , saute'till soft. Add, green chillies and all the spices and mix well
Dry roast chana dal flour till golden and nice aroma comes
Now add this roasted besan to sauteed onions, adjust salt according to taste , add amchur powder and mix well .
Mix well and the stuffing for kachoris is ready . Let it cool for some time
Now take small ball of ready dough and flatten it with hand , place sufficient amount of ready stuffing
Gather all the ends and seal it in centre amd again flatten it carefully with fingers
Heat sufficient oil in a pan and deep fry all the kachoris on very low heat till golden brown
Keep turning in between , deep fry till golden and crisp. Likewise , prepare all the pyaaj and besan kachoris
Serve hot or cold with tomato sauce or green chutney. Enjoy endlessly with family and friends...
