Ingredients

Serves : 4
  • All purpose flour 3 cups


  • 1 tablespoon Semolina or suji


  • Finely chopped onion 2 cups


  • Besan or chana dal flour 1/2 cup


  • Oil 4-5 cups


  • Fennel seeds 1 teaspoon


  • Asafoetida 2 pinches


  • Cumin seeds 1 teaspoon


  • Carrom seeds 1/2 teaspoon


  • Turmeric powder 1/2 teaspoon


  • Red chilli powder 1 to 2 teaspoons


  • Coriander powder 2 teaspoons


  • Garam masala 1 teaspoon


  • Finely chopped green chillies 2


  • Salt according to taste 1-2 teaspoons


  • Amchur powder 1 to 2 teaspoons

Directions

  • In a mixing bowl, take maida, semolina, salt and 2 tablespoons
  • Mix well everything and knead a semi soft dough using water amd keep it covered aside for rest
  • Heat 1 tablespoon oil in a pan , add fennel seeds, cumin seeds, carrom seeds and finely chopped onion , saute'till soft. Add, green chillies and all the spices and mix well
  • Dry roast chana dal flour till golden and nice aroma comes
  • Now add this roasted besan to sauteed onions, adjust salt according to taste , add amchur powder and mix well .
  • Mix well and the stuffing for kachoris is ready . Let it cool for some time
  • Now take small ball of ready dough and flatten it with hand , place sufficient amount of ready stuffing
  • Gather all the ends and seal it in centre amd again flatten it carefully with fingers
  • Heat sufficient oil in a pan and deep fry all the kachoris on very low heat till golden brown
  • Keep turning in between , deep fry till golden and crisp. Likewise , prepare all the pyaaj and besan kachoris
  • Serve hot or cold with tomato sauce or green chutney. Enjoy endlessly with family and friends...
