Ingredients

Serves : 6
  • Paneer - 450 grams (cut into cubes)


  • 1 large onion, chopped


  • 3 tomatoes, chopped


  • 2-3 red thai chilly


  • 2 tbsp oil or butter


  • 11 cashews


  • 1 tbsp raisins


  • 4 tbsp sesame seeds


  • 6 garlic cloves


  • 1 inch piece of ginger


  • 2 cardamom pods


  • 1.5 tsp coriander powder


  • 2.5 tbsp kasturi methi (microwaved for 30 seconds)


  • 1/2 tsp ground black pepper powder


  • 1/2 tsp turmeric powder


  • 1 tsp Garam masala powder


  • 1 tsp cumin seeds


  • 6-7 strands of saffron soaked in 1 cup of cream


  • Salt to taste (1 tsp)


  • 1 tsp honey


  • 2 tsp ketchup


  • 1 cup water

Directions

  • First take a pan on medium-high heat, and add the oil. Once oil is heated, add the cumin seeds and let them cook.
  • Add garlic and ginger to the pan and saute for 2 minutes.
  • Next, add the onions and saute until almost translucent. At this stage, add the cashews, sesame seeds, and red thai chilly. Now saute this until onions are completely translucent.
  • Add tomatoes and the turmeric to the pan and cook until oil releases.
  • Next add the raisins, black pepper, salt, coriander powder, cardamom, and the garam masala and give it a stir.
  • Turn off the stove and let the mixture cool completely. Once cooled, blend the whole mixture to a smooth paste.
  • Now transfer the prepared paste to a bowl and heat up some butter in a pan. (medium heat)
  • Add the kasturi methi, and the blended mixture to the pan.
  • Next add the saffron and the cream mixture, along with the sugar, ketchup, and water.
  • Let all of this cook for 2 mins, and also check the salt at this point.
  • After that, add the paneer cubes and let it simmer for 7 mins.
  • After cooking the paneer in the gravy, this recipe is ready! Enjoy with naan, roti, or rice!
