First take a pan on medium-high heat, and add the oil. Once oil is heated, add the cumin seeds and let them cook.
Add garlic and ginger to the pan and saute for 2 minutes.
Next, add the onions and saute until almost translucent. At this stage, add the cashews, sesame seeds, and red thai chilly. Now saute this until onions are completely translucent.
Add tomatoes and the turmeric to the pan and cook until oil releases.
Next add the raisins, black pepper, salt, coriander powder, cardamom, and the garam masala and give it a stir.
Turn off the stove and let the mixture cool completely. Once cooled, blend the whole mixture to a smooth paste.
Now transfer the prepared paste to a bowl and heat up some butter in a pan. (medium heat)
Add the kasturi methi, and the blended mixture to the pan.
Next add the saffron and the cream mixture, along with the sugar, ketchup, and water.
Let all of this cook for 2 mins, and also check the salt at this point.
After that, add the paneer cubes and let it simmer for 7 mins.
After cooking the paneer in the gravy, this recipe is ready! Enjoy with naan, roti, or rice!
