Ingredients

Serves : 3
  • 3 eggs


  • 1/2 capsicum 1 tomato


  • 1 carrot


  • 1 small red capsicum


  • 1 small red pepper


  • 1 small yellow pepper


  • 1/cup corriander


  • 1 tblspn butter


  • 2-3 bread slices


  • 1 Cheese cube cream cheese will do as well


  • 6-8 Muffin moulds silicon


  • 1tspn salt or to taste


  • 1 tspn pepper powder

Directions

  • Chop veggies fine
  • chop tomato fine
  • chopped coriander leaves fine
  • mix all the veggies in a bowl
  • add tomatoes to it too
  • grease silicone moulds with butter
  • break the eggs in a bowl and whisk well
  • now add the veggies mix into the eggs
  • beat well
  • add salt and pepper powder
  • Pre heat oven to 180 degrees
  • fill in your silicone moulds with the mixture
  • Put the filled moulds in the oven on a baking tray for 10 minutes 180 degree
  • Your Eggy veggie muffins puffed ready for your meal
  • spread cheese on the Bread Toast
  • Cut into triangles and pkace on these tosts or enjoy as is
