Ingredients
Serves 3
600 gms. Mutton
1 tsp. salt or to taste
1 tsp. turmeric powder
1 tbsp. red chili powder
1 tsp. garam masala powder
2 tsp. lime juice
1 cup curd
1 tbsp. coriander Powder
1 tsp. cumin powder
2 tbsp. ghee
2 tbsp. oil
1 cup rice, soaked for an hour
2 green chilies, chopped
2 tbsp. chopped coriander leaves
2 tbsp chopped mint leaves
3 tbsp. fried onions
10 roasted cashew
1/4 tsp. saffron soaked in 3 tbsp milk
1 tsp. rose water
1 small coal
Directions
Marinate mutton with salt, turmeric, chili powder, garam masala powder and lime juice for an hour.
Marinate again with curd, coriander and cumin powder for an hour.
Cook rice till 3/4 done.
Heat oil and ghee. Add marinated mutton and cook, covered for 10 minutes. Then pressure cook for 15-20 min. on a low flame after first whistle.
In a handi, layer the rice, followed by cooked mutton. Garnish with coriander & mint leaves, fried onion, green chilies, cashew, a ladle of the gravy, saffron milk and roses water.
Cover and cook in dum on low flame for 10-12 min. let it remain covered for 10 min.
Place a foil in the center and place a live charcoal. Drizzle ghee over it and cover for 2 min.
