Coconut flax seeds chutney podi is very healthy and handy and can be used to enhance the flavours in a variety of south indian and many other dishes. Coconut enhances the fibre content and texture of the podi The tiny flax seeds are full of nutritional goodness, and are more versatile than one can imagine.  Flax seeds are a great source of fiber, which is beneficial for digestive health and can also help lower cholesterol.  These seeds contain fiber, proteins, and omega-3 fatty acids called ALA, which helps to decrease the risk of certain inflammatory diseases like diabetes, arthritis, and heart disease. Flax seeds are also an excellent source of magnesium, manganese, and thiamin and antioxidant vitamin E.

Ingredients

Serves : 4
  • 1/2 cup Flax Seeds


  • 1/2 cup peanuts


  • 1 tablespoon gram/chane


  • 1 onion chopped


  • 10 Garlic cloves


  • 1 tablespoon Sesame oil


  • 4 Dried red chillies broken or as per the taste


  • 1 tablespoon White sesame seeds


  • 1/2 teaspoon Rock salt (sendha namak) to taste


  • 1/4 cup coconut powder (optional)

Directions

  • Heat a non stick pan and dry roast flax seeds and sesame seeds for 2 minutes on a low flame and transfer into a mixer jar.
  • Dry roast peanuts and chane separately and transfer them to the mixer jar.
  • Dry roast coconut powder for just 30 seconds and transfer into the mixer jar.
  • Heat oil in a pan and add dried red chillies and sauté till crisp.
  • In the same pan add onion and garlic and sauté till golden brown
  • Allow it to cool, when cooled add this to the mixer jar
  • Add rock salt and grind to a fine powdered chutney.
  • Transfer into a serving bowl and serve with south Indian dishes or any other dishes.
  • My tip - All ingredients are dry roasted and this can be stored for a month.
