Ingredients
Serves 2
250 gms plum fruit (aloo bukhara)
2 tbsp onion powder (homemade)
1 tsp grated ginger
1 tsp finely chopped garlic
100 gms paneer
1 tsp red chilli powder
1 tsp sugar (adjust according to the sourness of the plum puree)
1 tsp mix dry fruits (coarsely crushed)
2 1/2 tsp canola oil
3 to 4 cashew halves
1 tsp salt ( as per taste)
Garnish: 3 to 4 plum slices
Serving : 1 or 2 Chutney laccha paratha
Directions
Thoroughly wash the plum fruit.
Remove the seeds and chop them.
Make a fine puree by blending it in a blender. Strain it to get a smooth puree.
Now in a pan heat 1 tsp of canola oil.
Saute ginger and garlic for 1 to 2 minutes
Now add the onion powder.
Saute for 1 to 2 minutes on low flame. (powder doesnt need too much sauteeing )
Now add the plum puree.
Saute for 5 minute.
Add the red chilli powder, sugar (according to the sourness of the plum puree), salt to taste.
Stir well.
Cook for another 2 minutes.
The fruit gravy is ready.
For stuffed cottage cheese :
Cut the cottage cheese in cubes.
Now scoop out the centre of the cottage cheese
In a separate bowl mix the coarsely crushed mixed dry fruits and cottage cheese (scooped out ones) and a pinch of salt.
Now fill in the mixture in the hollow of the cottage cheese cubes
On a tawa spread little oil and grill the cottage cheese cubes till they change colour ( don't cook too much).
Also roast the cashew halves till they turn brown.
Now arrange the cashew halves on the cottage cheese cubes.
In a flat plate /bowl pour the gravy.
Place the cottage cheese cubes in fruit gravy
Garnish with plum slices.
Served with Chutney laccha paratha.
