We have to marinate chicken in a freshly ground masala
For that masala, dry roast 12 red chillies and keep it aside
In the same pan, dry roast cumin seeds, fennel seeds, coriander seeds and pepper
Add all the dry roasted things in a mixer jar, add ginger, garlic and lemon juice to it and grind to a fine paste
Clean the chicken pieces well, add the ground masala and curd to it
Leave to marinate for 1 hour
In a pan, add ghee and then add onion to it and fry till it turn to golden brown
Add the marinated chicken to it and add kashmiri chilli powder to it
Roast well, no need to add any water
After 15 min, the chicken GHEE roast is ready to serve
Garnish with chopped coriander leaves
