Mutton cooked in fried onions, ground paste of onions, ginger garlic paste, coriander leaves and with the spices - turmeric and garam masala powder.
It's less spicy and has the sweetness of onions
Recipe :
Grind to paste: 4 onions, 30 gms ginger garlic paste, juice of 1 lemon, half handful of coriander leaves, 1/4 tsp each turmeric powder and garam masala powder.
Heat 50 ml oil in a pressure cooker and add 2 cloves, 2 cardamom, 1 bay leaf and 1 thin sliced onion. Allow the onion to turn brown.
Add 750 gms mutton and saute for 2 minutes.
.Add the ground paste and 50 ml water and saute for another 2 minutes.
Add salt to taste , 1tbsp soya sauce (added this to get colour and this is completely optional) and pressure cook for 5 whistles. 📌5 whistles =Mutton cooked 100%. So the number of whistles depends on the type of cooker and the mutton.
Serve hot with ghee rice or with dosas, idli's rotis, paratas, idiappams, appams.
