  • 1 pound of callus.

  • 1/2 pound of a big onion

  • 1/2 pork

  • 1/2 pound of tomatoes

  • 2 garlic hulls

  • 1 pound of peeled and minced Creole potato

  • 3 chorizos

  • 2 tablespoons of sunflower oil

  • 1 Saffron to taste

  • 1 bucket of meat

  • 1 cilantro

  • Tip this is a colombian recipe if you don't know the ingredients you could subtitute or ask a colombian friend to help you 1

  • 1 pinch salt


  • Wash the callus very well, chop it into squares, place in a pressure cooker and cook the callus until it is soft.  In a frying pan sauté the liquefied onion, the chopped tomato and the liquefied garlic add the pork to the portions you want, it can be chips. Also, add the chorizos and 2 ½ cups of water.  Mix the skillet with the corn and let it simmer until the pork is cooked, add the peeled and chopped Creole potatoes and continue the cooking to its point.  Serve the mondongo in a bowl and can accompany it with white rice.
